Spaghetti di riso al tofu affumicato con funghi

Spaghetti di riso al tofu affumicato con funghi e zenzero

Tempo di preparazione 20/25min
Dosi per tre/quattro persone
  • 250gr di fettuccine di riso
  • 250gr di champignon
  • 150gr di tofu affumicato
  • 1 scalogno (opzionale)
  • 1 ciuffo di prezzemolo
  • salsa di soia
  • olio extra vergine di oliva
  • semi di sesamo
  • un pizzico di sale
  • pepe

Pulire gli champignon, sciacquateli e poi tagliateli a fettine nel senso della lunghezza. Sbucciate lo zenzero e grattugiatelo. Fate appassire lo scalogno tritato a fiamma bassa in una padella ampia con due cucchiai d’olio, tre d’acqua e un pizzico di sale per una trentina di secondi. Aggiungete i funghi e fatele insaporire mescolando per un paio di minuti. Unite il tofu tagliato a dadini, lo zenzero e qualche cucchiaio di salsa di soia, poi proseguite la cottura per qualche minuto. Intanto cuocete le fettuccine di riso in abbondante acqua, scolateli, temendo un poco di acqua di cottura, e metteteli nella padella con il sugo. Fate saltare il tutto, aggiungete un po’ di pepe e il prezzemolo tritato e servite cospargendo con i semini di sesamo una volta nel piatto.
